What AD do you go to that treats you this way? There is no need to keep it any longer than five minutes.

Five minutes won't cut it on a relatively new watch that's basically doing what's to be expected and pretty darn well I might add.
It may even continue doing it for the whole of the entire time the OP owns it or it may get worse in some other way.
When all is said and done, the OP may drop the watch next week or simply knock it against something in just the wrong way and all bets would be off.
If the watch was older and closer to needing a service then it may become apparent fairly quickly that something was up with it when placed on a timegrapher which would warrant opening it up then that is understandable.

But in theory, they could probably analyse the OP's watch continually for five days straight and come to the conclusion that nothing is wrong with it.

One that knows what’s it’s doing… esp if their watchmaker is not in that day…

Yeah, I mean honestly, normally I wouldn't care about it, because it's running far better than any mechanical watch I've owned previously. It's just because it was running at around +3s/d, very consistently, and then suddenly it's getting like +8s/d, but only on odd days, that makes me think something might be wrong with it.

I'm very used to mechanical watches though, and I've had watches in the past that ran at +15s/d, and things like that, so it's still running very well, but it's the inconsistency that's sort of causing me a bit of concern.

Don't be too concerned.
It could be doing worse and still be within spec.
Obviously it would be nice if it was doing better all round but that may be the preserve of a different brand of mechanical watchπŸ˜‰

As an example.
I have a watch that used to run at about between -2.5 to -3.0 per day(on the wrist) from new but it was typically closer to the slow end of the range.
Then it was serviced after it started acting irratically where I suspect it was primarily the Auto winding mechanism. I asked them if they could look at bringing the rate up to be running slightly fast.
When it came back from service it was running between -3.0 and -3.25 per day(on the wrist) but mostly at the top end of the range. It wasn't what I was hoping for but it was still within spec and running just fine. Five or so years down the track, the watch all of a sudden started running spot on(not losing or gaining) over a weekly period then it would lose 3 seconds in one day and return to not losing or gaining any time.
Then a week later it would routinely lose another 3 seconds in one day and on it would go like that every 7-8 days.
Currently it can lose those 3 seconds in one day every week and a half or up to 2 weeks and the rest of the time it remains spot on.
Wearing habits haven't changed and I haven't knocked itπŸ‘Ž
Naturally, I'm not complainingπŸ˜‰

It's the nature of the beast.
Sometimes you win em. Sometimes you lose em. Sometimes it can be worse than we are accustomed to and sometimes it's better.

But the way yours is going, I wouldn't be the slightest bit concerned.
Just hack the movement and re-set as requiredπŸ‘
