It’s been my understanding that you can’t overwind a watch movement, you can break the crown stem on a manual movement if you try hard enough, but can’t even do that with an automatic movement.
I think what people mean when they say 'overwound' is that the watch stopped for some reason (broken, corroded, overdue service), and has been wound until it can be wound no more. The winding is not the reason why the watch stopped. As Marsi said, short of taking pliers to the crown and breaking the mainspring or the winding gear, there is no such thing is overwinding a watch.
