First Omega! Speedy 321 "Ed White" vs Two-Watch collection

I'm at a crossroads and looking for some solid guidance—especially from anyone who owns or has spent time with the modern Calibre 321 Ed White, a Reverse Panda Speedy, or the IWC Ingenieur Titanium.

I recently went through a massive collection shake-up. I sold off my Submariner Date and my Rolex GMT-Master II "Bruce Wayne" to streamline down. In their place, I picked up the new Tudor Black Bay Ceramic 2026 on the full ceramic bracelet to serve as my primary, daily watch.

Now, I have a remaining budget of £15k and I’m split down the middle between two entirely different directions (no dress watches, Cartier, or Reversos for me):

  • Plan A: Put the entire budget into a standalone Speedmaster Calibre 321 "Ed White" (Ref. 311.30.40.30.01.001). This would be my first Omega.
  • Plan B: Split the funds on the secondary market to create a 3-watch rotation. This would mean a Reverse Panda Speedmaster and pairing it with the IWC Ingenieur Automatic 40 Titanium (IW328904).
On paper, Plan B offers more variety, but my gut tells me the 321 is a tier above in pure watchmaking pedigree, finish. Moving on from a Sub and a Bruce Wayne means I really want whatever comes next to feel substantial and special.

For those who have owned the 321: does the hand-assembled movement and vintage case profile make it feel special enough to pass on a multi-watch rotation? And for those with the Titanium Ingenieur or Reverse Panda dials, how do they hold up as daily wears alongside other sports pieces?

Really appreciate any insights or advice you can throw my way. Cheers!
