Hi I'm eyeing up a constellation for a dress watch and would appreciate some help on originality. Do pie pan arrow head dials come originally in a straight lugged constellation or are they all "dog legged"? I have attached a photo of what I'm talking about for reference. Arrowhead markers usually came on the non-dog-leg lugged cases. Those hands are too long though, and the crown is also a replacement. Can't tell much else from that picture.

That's worrisome. It's either a strange transitional watch from 1959 / 1960, or even more likely some kind of franken. Before anything more can be said, photos of the internals need to be seen.
First, I don't think you understand what a doglegged case is. This is a doglegged case. This is a lyre shaped or rounded lug shaped case. Your case appears to be some kind of Frankenwatch watch put together.
Franken. 168.0005 didn't come with a 551. https://www.omegawatches.com/planet-omega/heritage/vintage/ 551, didn't come in a 168.0005, http://naligazone.com/index.php/data-watch/omega/caliber-5/cal-551. Also, 168.0005 is a dogleg case, which yours is not.
