What sound were you expecting to hear as you wind the watch by hand? I just wound my Omega automatic (an older model) by hand, and I don’t hear anything, either. But then my hearing ain’t what it used to be. :(

It varies from watch to watch, but often you can notice a subtle ratcheting sound or sensation. You can test the hand-winding by letting the watch run down completely, and then winding it completely (e.g. 30 turns) while holding the watch stationary. Then put the watch down on a table and see how long it runs. If it runs 36 hours or so, then you know that manual winding is working.
