I’ve seen these two crown designs on a multitude of C-Constellations, on both steel and precious-metal examples. So my question is, what do these two different styles denote, if anything? Earlier or later references? Caliber change? Thanks.

I don't know the true answer but at first glance the coin edge around the second watch matches that style crown significantly better than the previous crown would.

I actually found that to be the case for the ones I’ve seen, both crowns are definitely much better to use than the old 10 sided crowns so there’s that

Agreed! The only way I can get a good grip on the 10 sided crowns to set the time or to wind the movement is by wearing a latex glove 😀
