Are parts on a modern 321 interchangeable with 145.012?

Theoretically, yes.

But good luck finding those parts (the NEW321 is Bienne-only service).

So if an original 60s moon watch needed parts could they be sourced from the manufacture of the new 321 movement?

Maybe. The parts on the original movements were not all the same, so there were already compatibility issues across the generations of the 321, before the 321B came out. So it would depend somewhat on the specific parts you need, and what era the movement is that you need them for.

But all this is somewhat moot, because despite people's predictions that Omega would now make spare parts available for the 321 again, they have not. There are no more spare parts available from Omega than there were before the 321B was announced.

it makes sense. All parts can’t all be exact, as manufacturing methods, expertise must of been different back in the 60s

Nothing to do with that. There were design changes made to the movement over time.

Movement designs aren't static, they are being changed all the time. Improvements are being made sometimes decades after the movement stopped being produced - spare parts are upgraded to new designs regularly.
