The biggest difference is the movement. The movement in the Ed White is waaaaaaay more expensive to service.

Yes, but only because Omega decided to limit the servicing options and does it all in-house in Biel. Not because the caliber would be difficult to service. How would the vintage 321 get serviced otherwise.

Is it? So why is the complete service flat rate for a chronograph 950 on their site without a mention of separate pricing for a 321?

Maybe you have to factor in the shipping cost to Switzerland, which can slightly increase the price? All the other watches can be serviced in setvice centers around the world.

Even if that is the case, that doesn't amount to "waaaaaaay more expensive".

There is absolutely no reason the 321 can't be serviced outside of Bienne, there have been millions of services on that movement since its introduction almost 80 years ago. There is nothing unique about it, it's probably simpler to service than a modern 3861. Omega has just made parts unobtainable to repairers thus driving overhauls back to Omega in Switzerland. And to keep the mystique alive.
