Hello guys im currently working on a Omega seamaster 166.089 cal.752. I removed the old Mineral crystal and want to install a new one. But there is this brown gasket. Should i leave it in there or where can i find a new one?

That is the crystal gasket, and you will need a new one - part number is 098EG0007.

Perfect. Thank you!

Is there a list where i can find those spareparts in the Future? Where i can tipe in the referencenumber and find crystals and other parts?

Should i put in the gasket in the case first or press it in together with the crystal?

You can't - there's nothing like that publicly available. It's only for Omega and for Omega certified watchmakers.

It's described as an L style gasket, so they can be tricky depending on the exact construction. Generally you put the seal in the case first, but there are some exceptions.
