Just cancelled when I ask for a tracking number.
Funny how the guy on instagram doesn't show the watch full on either.

He has also removed my comment from his instagram page too.

 

As Ebay is fond of warning people, clicking "Buy it now" is a commitment to buy, and essentially the seller is guilty of breach of contract - at the moment you paid him, the watch legally belonged to you. At the very least you should be able to push to have his ebay account closed. Some form of punishment is justified.

Happened to me last year, too.

Was really shattered to see a watch I had spent months finding in good condition be sold after I had paid for it to an Italian dealer... Only consolation was watching him spend three months trying to sell it on, only to make a tiny profit.

 

Lost a Ranchero a few years back. Paid instantly, seller refunded my payment a half hour later only to relist the watch for more than double what I had paid.
