I'm quite certain that only the date is quick-set by pulling the crown out repeatedly, all the way. The day has to be changed by advancing the time until the correct day appears, set the watch to time, then repeatedly pulling the crown out all the way until the correct day appears. Probably caliber 750. ConElPueblo beat me to it!
That's what I thought but I'm used to my Rolex 1803 on which the date auto advances; here only the Day is tied to the hours and the quick set function needs to be used daily to advance the date. Also it's not a sparkle dial. I'd seen the linked thread but I didn't realize the date needs to be advanced manually each day (that's the only way to advance the date). Thanks for the inputs all.

I think he's pulling your leg. There are several Omega calibers that set the date that way. I wore a Seamaster cal 613 today that sets that way. I own a cal 750 day/date like yours that sets that way. I'm not a fan of these because I'll forget pulling the crown out advances the date when I go to set the time and WHAM! suddenly I'm a day ahead and my OCD kicks in and I have to pull that fricking thing out 30 more times before I can cram the OCD back in it's little box...

The seller is trying to fight the return saying that the watch only advances the date by manual adjustment; any reference other than this thread that I can point to?

If you used Paypal to buy it, I wouldn't bother discussing it any further with the seller but just open a Paypal case.
I was following the ebay path; ended up opening a case with ebay who decided in my favor. I used this thread and the referenced watchuseek thread above as evidence. It was decided in my favor. The return goes out tomorrow. Thanks all for your help.
