I recently bought a 1960ish Seamaster Calendar Cal 562. Now that I have had it for several days it is evident it is running about 6 sec's per hour fast. That seems like a lot to me. I presume it can be regulated down? I have searched for instructions (no luck) as it doesn't have the +/- lever so common on many other movements. I am guessing you turn that little screw that comes into the swan neck from the side. Does anyone know of a technical reference? I haven't decided if I want to try my hand or let a pro do the job.

I suggest you take it to a pro. 6 seconds per hour is pretty bad, 6 seconds per day is reasonable.

6 seconds per hour is a lot, it may be that it needs a full service

It needs servicing. Even if a seller on eBay says a watch was recently serviced, they probably don't really know what that means and if they do "recently" might be in glacial terms.
