Yup its pretty widely known that it was their costume designer, Lindy Hemming's idea to go with the Omega Seamaster Diver 300m. The rest as they say is history.

Am I right in thinking that Bond’s “back story” was he was ex-SBS, who are supposed to favour Seamasters over anything else?

I remember hearing about the line in Casino Royale where she asks if he’s wearing a Rolex (as it’s supposedly favoured by SAS troops), when he answers “Omega” then it’s supposed to be a subtle line about him being SBS.

Might just be coincidental, or internet hearsay of course!
