I'd avoid kippers, stick to cod until you've become more experienced. I suggest at least 3 years locked in a dark room with your computer researching different smoking methods before you venture into that particular fish market. Once you do emerge, pale and thin from your incarceration, you may be able to smoke your own. It wont be easy, I've never been able to get one to light and am not sure which end to put into my mouth even after many years of research. One thing that is easy to understand is scale condition, never buy a fish that's been re scaled, if offered one by a shady character in a pub car park, sneer at him and throw it back.
