This pocket watch by Longines was issued in 1976 to commemorate the 200 years of our nation. It was issued in a very limited edition of only 200 pieces. Diamonds set in the body of the eagle, above 13 sapphires and all that encircled by 50 rubies. Searching the Internet I found only 2 ever offered for sale. The last one sold at Sotheby's auction in 2011 for close to $7000 !! This one is number 16 out of 200. 46mm across, 61 grams.

Well it was $7000 in 2011 as mentioned above. I saw that One was sold for 7000 in New York and about the box that’s worth 500 alone. Do you have any guess on what it would be worthless now?
With only 200 in existence, your guess is as good as anyone as to what the market will yield today. The info you already have is a good starting point. I don't see the demand for pocket watches being much different now than it was in 2011. I ran an inflation calculator on $7k in 2011 to 2019 and got $8k. The box listed for $500 has not sold yet, so all that means is one person thinks the box is worth $500. I am not in the appraisal business or an expert on such matters, so all I can confidently say is the watch is worth what someone is willing to pay for it. If you made me put a number on it, I would say $8500. I could be totally wrong though.
One other thought, gold's value today is about 80% of the high in 2011. So that might work against you a little bit.
