Am I right in thinking either Craig or Brosnon’s Bond wore a 2561.80.00?If not, were the any differences in the watches they wore besides the movement?

No. Brosnan wore the full size version 2541.80 in GoldenEye. But Prince William (gift from his mother) wears the 2561.80.

Yes, though the size difference cascades through several individual components such as the hands, bracelet, etc.. Movements are the same, as is the design.
