Is it a good idea to use a leather conditioner on fine leather watch straps?
What products ( conditioners ) are recommended?

No big expert, they should chime in soon, but I do choose leather for many things. Before using any product I would be checking what leather, which tanning process and any caveats for that leather. Many but not all leather products use a lacquer finish so conditioners are not really useful if the lacquer is in good condition.
On watch straps, I have found that some German made watch straps on quite expensive watch brands have had a life of about 6-12 months and then they have disintergrated, while artisan straps using sweat resistant leather lining and various outer leathers have lasted many years. The more complex the strap and unique the leather, the more difficult to say. Common un-lacquered bovine leather is pretty receptive to conditioners but colour change is always a possibility.

I rarely condition my straps, but when I do I use Bicks 4. I’ve used that product for decades on my leather boots and it never leaves any residue or has discolored the leather. Once or twice a year is probably all you need, but doing it more often shouldn’t hurt.

Yes, and Allen Edmond makes a conditioner that will not darken your leather. I’m sure there are others.

I have quite a few pairs of decent leather shoes and belts. A product that I love for my good stuff is Saphir renovator cream. Would work for fine leather goods too.

Are we talking dress watch straps. The shinning polished type. Never needed to as there is a thin coat that gives them the shine that wears a bit afterwards.

But never seasoned any leather myself as the beauty of leather is the wear.

( Side note - I'm not a city slicker and polishing a pair of RM Williams boots would have me laughed out of the pub )
