Exactly what services do the boutiques offer?

I was at the Atlanta Omega Boutique for a RedBar event, and with an appointment made in advance, they had a watchmaker there to open/regulate/check a personal Omega of our choice. They had complimentary drinks, hors d'oeuvres, and an overall great time!

They also offered an Omega archives report on one watch of choice. I chose my 105.012-65.

Edit: That was about 4 months ago, and it sounds like it is on its way to the OB this week 👍.

There OB on London are generally great (when they are not closing down).
Get to know your local OB well and you may be offered the chance to purchase LE pieces. easier than from an AD.
