    If so, when did it begin? does the new one still have signed crystal too?

    Omega started with the signed crystals sometime in the mid 50's.

    The chances of it having its original crystal is very slim, but that isn't considered a part that has to be original. If I were sold a watch with a replaced crystal as "all original" it'd be no different than buying a car that was "all original" with replaced tyres.
