While I am certain money is a huge reason why it won't be postponed, there are certainly other reasons - not least is the athletes. For sports that are true Olympic sports, where the Games is the pinnacle of the sport (so not golf, tennis, etc.) athletes develop and execute training plans that allow them to peak at the right time - at the Olympics. Messing with the schedule now, so close to the Games, would create havoc.
Not just with training plans, but the ripple effects could go as far to potentially affect something as fundamental team selections if the delay went on long enough. Having some experience with team selection (as an athlete trying to make teams, and from an administration point of view, as I was part of drafting team selection criteria for Olympic Games) this would create a ton of problems. It's can be hard to appreciate what goes into this kind of thing if you have not been involved in it, and the fall out from the slightest hiccup resulting in legal challenges, mediation, Court for Arbitration in Sport, etc.
Postponing sounds like no big deal, but this would be a very big deal indeed, and my feeling is that most athletes would tell you just leave things as they are thanks...and coat themselves in copious quantities of deet based repellent.
While I think you will see some athletes drop out, I doubt there is going to be an avalanche of people giving up their spots, at least not in sports where this is the pinnacle, rather than just another few rounds of golf jammed into a schedule of majors through the summer...
