I got a watch from Dufa last week with a regulator complication, and I have to say I don't really like it. I find it takes way too long to actually decipher the dial and read the time. Is this something you just get used to over time? My brain can't seem to wrap itself around it after wearing my other watches.

Yes. They are interesting. Patek makes one with an annual calendar that is very sleek.

I think it would have been easier to read if the hour hand was a 12 hour dial (like the Patek) instead of the 24 hour dial . What is your take?

Agreed 100%. The fact that it's a 24 just throws your brain for a loop. That Patek is doing it right.

I've always found them to be a little complicated and unintuitive to read as a complication but they do look interesting I guess.
