Red snapper? In late 19th-century Minnesota? I'll pass on that.... but I'll bet the red squirrel pot pie is a winner.

I was served squirrel pot pie once in the deep South (not Thanksgiving). "Mind the buckshot," I was told.

Agree. Walleye or pike, maybe. Otherwise it's the bear and opossum for me.

Yellow tail snapper is the one to eat - and best fresh caught from the Gulf.

Not much processed in those days.

The potato salad I had last trip to the US was more like a dessert and the ham was 72% meat ( WTF where the other 28%go)

    "more like a dessert"?

How hard can potato salad be.

Cube 1 kilo steamed chats when cold.
Add to a bowl with 1 cup S&W Egg mayo.
Add chopped spring onion, capers and a dash of Tabasco.
Mix with silicone spatulas (doesn't bust up the cubes).

    Eat.

Our American Cousins really knew how to put a good feast together in Minnesota in 1883.

I suspect the red snapper was fresh caught, iced, boxed and rushed on various "railroads" to St Paul.

They seem to have lost their way lately though :(

First off, any general indictment of our national food - potato salad - is bound to be flawed... there is simply too much variation, in style and quality, from region to region and purveyor to purveyor.
Have we indeed lost our way? I say the way to find out is to have some of our Midwestern brothers gather at the St. Paul Hotel - the hotel that succeeded the Windsor in 1910 - sample the Walleye, the Bone-in Ribeye, the Brussels sprouts with Nueske's bacon, and report back to us.

Well, it was a game dinner... an all-you-can-shoot American tradition... but still an impressive menu.

@MMMD no intention to offend and apology if I did, as trips to Texas, and New Mexico I had some steaks and Mexican foods that were on par if not better than Australia has to offer.
Living where I do I can fish for a feed for tea or throw a crab pot in, whilst shooting a Magpie goose to return to some of the biggest mud crabs anywhere. To be served with mostly home grown fruit veggies and herbs.

Last trip to Hawaii left me gobsmacked at the processing of food.
Being a ex butcher and working for the dept of agriculture in northernmost Australia it was way beyond I had seen before.

Would love to sit at a table with the above menu.

No offense taken. There is much to belly-ache about, figuratively and literally, when it comes to the worst of American food, which is all too prevalent in restaurants and supermarkets. Food processed and sugared-up until every bit of nutrition has been emptied from every calorie, making diabetes the new normal. You are living in a veritable horn of plenty... I hope the pendulum is swinging back in that direction here, but I think that it's mainly doing that for the few who can afford healthy food, who know the difference, and who can will themselves away from the nasty stuff. Unfortunately, empty calories are insanely cheap and addictive here.

Innocent schminnocent. Those nasty little rodents will chew their way into your house and chew up everything in it, then chatter at you about it all day. They are the least innocent animal on that menu.
