2365-2 Reference

Am trying to bone up a bit on reference numbers pertaining to vintage Omegas. I am working my way through Erich's great book but am still a bit lacking on this subject. I understand that Ref 2365 is a reference number; also understand that reference numbers may be preceded by letters, e.g. CK, to designate metal.

What does it designate when such a number is followed by a dash and another numeral, e.g. 2365-2?

I don't know if this is the official name for that number after the hyphen, but I think of it as a "production run" number. I've seen other people call it a "sub-reference" number. I believe they are generally sequential, so the example you are referring to would have been the second production run of that reference. Sometimes you will find some correlation between stylistic features of the dial/handset and the production run.

this is correct 👍
and it has no importance for the desirability or value.
It may help to assess originality in some cases, i.e. if a watch with a "-1" case has a very high movement serial number you can assume that it has not left the factory this way and vice versa
