I have Seamaster is a 14701 - 1 and whilst browsing around the world wide webs I'm noticing that there are a number of variations to that last digit. What does that number signify?

I believe that number indicates the model's "iteration".

As if when Omega decided to start production of the first 14701 model they already had plans over time to issue new versions of it (which would bear the reference 14701 - 2, 14701 - 3...).

This is also true for the first Speedmaster reference, 2915, which you can find in 3 iterations with some differences in most of its parts (dial, hands, bezel, etc..) and also the second one, 2998, up until they started using a different convention, in fact they went from 2998 - 1 to 2998 - 6 and then started using what i believe is an indication of the year when the model was designed (i am not saying produced on purpose) and hence they issued ref 2998 - 61 and 2998 - 62.
