I've shared some tuna with family & friends. White meat fish freezes very well if you encase it in distilled water. Drop the filets into a zip lock bag filled 3/4 with water, squeeze it til all the air is out and zip it closed. Put the bag in the freezer on it's side so the filets suspend in the middle of the ice. No way they can get freezer burn this way. You can store fish like snapper, flounder, striped bass, sea bass, and any other white meat fish for over a year and it will still be great.
